The nose on this elegant sake made by a female master sake brewer Miho Imada is a collection of pear, honeydew, yellow apple and sweet rice aromas. Talk about a ripe and layered sa ke. This Junmai Ginjo drinks like a Daiginjo in that it is clean and nuanced with a very gentle roundness. There are hints of apple, pear, and mango fruit tones, but this brew is not sweet. It is a very drinkable sake that is a celebration of smoothness, and the fluid feels great in the palate. "Soft with impact" is a great combination in the sake world.
