The exposed cutting edge of AS steel has even better edge retention than the best stainless steels and regular white/blue carbon steels. If you've never owned a carbon steel knife, this blade will impress. While knives made entirely of carbon steel need regular maintenance to keep them rust and stain free, our black forged knives are easy to take care of due to their stainless steel cladding.
