Fusilli Lunghi is long fusilli: a spiral that eats like a long pasta and still traps pesto in the twist. It is not the short corkscrew most Americans picture when they hear fusilli . Pasta Sonoma extrudes it from premium durum and semolina (Montana hard amber durum wheat) and dries it in small batches in Sonoma County. The shape is a conversation piece and a practical one: oil-based sauces cling, and it holds up in a composed salad. We pack two bags of it in the Short Pastas combo and call it out in the street-corn salad recipe as an alternate to torchiette. Best with: pesto, vinaigrette salads, light tomato, garlic and oil.
