This batch of fresh fusilli is made with organic Einkorn grown in Trumansburg, NY. With origins in the Fertile Crescent, Einkorn is one of the earliest cultivated grains known to m an. Einkorn has a distinct aroma of straw and cut grass. There's clearly a more vibrant yellow pigment in this grain - similar to durum or Khorasan. The flavor is deeply nutty. This pasta pairs particularly well with pesto or a pomodoro sauce.
