The ones who open the cupboard at 10pm and just stare at the chocolate options weighing up which one hits different. Yeah. That's who this cake is for. So what even is ganache? Good question actually. Lots of people ask. Sounds fancy doesn't it. French and everything. But really it's just chocolate and cream melted together slowly until they fall in love and become this glossy silky thing that's better than either of them separately. Some places do a thin layer on top and call it a day. Not us. We go all in. Here's how ours works. Chocolate sponge first. Pretty standard but done right. Damp. Dark. Tastes of chocolate not just sugar. Then we soak it. Just a bit. Keeps everything moist. Then the ganache. Lots of it. Between the layers. All over the top. Dripping down the sides if you're into that look which I am. We use good chocolate. Not cheap cooking chocolate. The stuff you'd actually eat out of the bag if you were having a moment. Then we let it set just enough so it's firm but still soft when you cut into it. That moment when the knife goes through and it's all shiny and perfect? Yeah. That's the bit. Who's ordering this one?
