The pan is the 46cm polished carbon steel, the standard entertaining size, comfortable for twelve through a thin Valencian rice. Under it sits the 40cm two-ring burner with independent inner-and-outer ring control, so heat moves with the dish through its stages. The three-legged stand rolls on two wheels for easy repositioning around a courtyard or patio, with a tray underneath sized to hold tongs, oils, and condiments within easy reach during service. Hose and regulator complete the kit, ready for a standard LPG gas bottle (bottle not included). The polished carbon steel pan develops a dark seasoned surface over time — the working surface that delivers the socarrat at the bottom and gives paella the crust it's known for. Polished pans need seasoning before first use and careful drying after every wash to prevent rust.
