Make this fresh pickle and keep it in the fridge for when you wa nt to add some intensity to your meal. This is a very traditional recipe, balancing savoury garlic, sweet coconut and intense chilli heat. We find this pickle is best served alongside a full meal, as it's fiery enough that a little goes a long way!
