By accurately controlling the temperature of your fermentatio n, you can produce consistent beers, every time. When fermentation occurs, it produces heat. But when fermentations get too hot, it can cause the yeast to produce undesirable off-flavours. Therefore, brewers apply cooling to the fermenter so that the yeast has a comfortable and repeatable environment in which to work. Many brewers use fridges for this application.
