About Gentian Gentian (Gentiana lutea) is a mountain herb native to the alpine regions of Europe, recognised for its tall stems, broad leaves, and vibrant yellow flowers. The root has traditionally been prepared into teas, bitters, and herbal extracts with an intensely bitter flavour that makes it one of the most distinctive herbs in traditional herbalism. Due to its remarkably bitter taste, shepherds in parts of Europe were said to identify Gentian roots simply by smell, and the herb later became a famous ingredient in traditional alpine liqueurs and aperitifs.
