German Bread spices or Brotgewürz are a variety of bread spice mixtures often used in German bread making. Made of staple spices, including Caraway, Anise or Aniseed, Fennel and Coriander to bring a traditional warmth of flavour, so often found in southern Germany, Austria, and Switzerland, as well as South Tyrol province in Italy. Caraway is commonly used in European breadmaking. It adds a citrus and nutty flavour that's slightly pungent. Anise (Aniseed) provides its well-known liquorice touch and a makes for a fragrant bread. The sweet and warming fennel provides an extra layer of mild licorice. All these flavours create a boldly flavoured loaf of bread. We suggest you use one to three tablespoon per loaf or roughly one tablespoon per 500g of flour. Some recipes will call for more or less of the spice mixture, but if this is your first time making and using this kind of seasoning, start with a small amount and see how strong you like it, adding more on the next bake - better to start off low as these spices are potent and some people may find them overwhelming. This mix does not contain any unnecessary additives, anti-caking agents, and has no salt so as not to unhinge your bread dough recipe. Whenever possible, buy your spices fresh and in small quantities as this conserves their flavours and strength. Unless indicated by the recipe, dry spices are mixed with the dough at the beginning of the kneading process to allow for proper development of the flavour. If using a bread machine, follow the manufacturer's instructions for when to add the spice mix.
