A blend of gin, vermouth and pickled onion. The Gibson is a Martini defined by its onion, and ours never puts one in the glass. We soak pickled onions into the gin and dry vermouth in the freezer, then filter them out, so the savoury note runs through the whole bottle rather than sitting on a stick at the top of it. The result is a dry Martini with a depth an olive or a lemon twist cannot reach, and you get it in every mouthful rather than the last one. Nobody agrees on who the Gibson was named after.
