It is a contemporary take on Old Tom gin, built from 100% Québec corn and a set of indigenous botanicals that include boreal plants, fruit from the Eastern Townships and honey from the Laurentian Mountains. Lightly sweetened, amber in colour and quietly complex. 40% alc vol 500 ml Base spirit: 100% local Québec corn Nose: Fresh and floral, with delicate sweetness and aromatic honey alongside hints of mint and soft fruit. Palate: Balanced and layered. Floral and fruity notes, including cranberry and sour cherry, sit over coniferous botanicals. Spring honey roundly ties the flavours together, while wild mint and gentle spice prevent the sweetness from feeling heavy.
