Ginger is part of the Zingiberaceae plant family that also includes turmeric, galangal and cardamom. These tropical, flowering plants develop rhizomes or roots that are widely used in cooking around the world. Ginger is a true cultigen, meaning that the plants does not exist in the wild and is a hybrid of many different species of Zingiberaceae. The original plants originated in SouthEast Asia where they were domesticated and introduced to new lands with the austronesian peoples starting around 5000 years ago. Fresh ginger and dried ginger have completely different flavor profiles. When dried, ginger becomes stronger and more aromatic. We are heavy users of ginger both fresh and dried. This ginger is sourced from D.M.R Jayasooriy in Kargasthanna, Sri Lanka. It has an incredible tropical flavor with hints of pineapple and citrus.
