This buffalo ginger is an heirloom variety grown by farmers in northern Vietnam. It has a complex, bright heat that works well with allspice, garlic, chiles, cinnamon, cardamom, an d nutmeg. As such, it can work with sweet and savory dishes. Pumpkin bread, apple pie, sweet potatoes, poached fruit and French toast are all lifted by the addition of ginger.
