Let them run with the bait until you are certain they have swallowed the bait, then close the bail and slowly reel to engage the hook into the corner of the mouth. When the rod is fully engaged, you can give a bump to set the hook, but mainly just start fighting the fish and the levering action of the hook will dig the hook point deeper.
