Goraka is a fruit in the mangosteen family native to Sri Lanka. It grows o large trees that produces small pumpkin like fruits that are harvested and dried. Goraka are the dried peels of the fruit. Sometimes it is called Malabar tamarind and is one of the main sour spices used in Sri Lankan and south Indian cooking. We have fallen in love with this dried fruit due to its amazing sour and tart flavor that comes from the high amount of hydroxycitric acid. It is almost like a natural citric acid used in so many processed foods. In Sri Lanka and south India it is used in meat, crab and mostly coconut fish curries to bring a layer of sweet and sour. It works very well in pickles, chutneys and lentil stews. Also a beautiful ingredient for drinks and lemonades.Our Goraka is sourced from a Kandian forest garden run by Madduma Bandara in Sri Lanka where it grows alongside mangoes, tamarind and pepper.
