Green garlic is garlic that's harvested before it bulbs. The taste is similar to ramps, scallions, or leeks, and is much milder than bulb garlic. The whole plant is edible from the would-be bulb end up to the green leaves. Just be mindful that it doesn't stand up to super high heat or long cooking times.
