Having made their long journey across the Atlantic ocean to Ireland, the ex-Pinot Noir casks from Quails’ Gate were filled with Green Spot. These were left to mature further for ap proximately 16 months in Midleton Distillery’s famous warehouses. The whiskey was tasted monthly to ensure that the perfect marriage of Still Pot whiskey, wine notes and wood was achieved.
