Every year my customers ask for green tomatoes! They make amazing things with them (relishes, chutneys, and the like). Others buy a few boxes of red and a few of green, in order to stagger their processing efforts: first the really ripe tomatoes and any with cracks, next those that started out orange but have turned red, and last the green tomatoes they've let ripen up in a single layer. Early in the year, we start our own tomatoes in the greenhouse from seed, then plant the starts outside in raised beds when the weather is warm enough.
