Cardamom is an aromatic spice. Fruity, floral, citrusy and pungent with a dash of warming eucalyptus. It’s amongst Yotam’s favourites on his spice shelf - mainly because it’s incre dibly versatile. On the sweet side, cardamom aromatises custards, rice puddings and ice creams, giving them a whack of character. But it also works with sweeter vegetables - carrots, parsnips, pumpkins.
