Ingredients 1 cup sugar 1 cup water 1 cup sultanas 1 Tbsp butter 2 cups self-raising flour Pinch of salt ½ tsp Rawleigh’s Mixed Spice ½ tsp Rawleigh’s Cinnamon ½ tsp Rawleigh’s Nutmeg ½ tsp Rawleigh’s Ginger ½ tsp baking soda Method Place the sugar, water, sultanas and butter in a saucepan. Bring to the boil and cook for 5 minutes. Allow the mixture to cool until it is still slightly warm, but not cold. Stir in the self-raising flour, salt, Rawleigh’s Mixed Spice, Cinnamon, Nutmeg, Ginger and baking soda until combined.
