Our mutton contains the whole animal. It is a lamb (a sheep) that is over 1 year old. It's the same wholesome, grass-raised animal as its younger relative. We use the whole animal - not throw-aways or left-overs. Schoenborn Family Farms procures fine, healthy stock, exclusively for us. The result is optimal nutrition using meat, bones & organs.
