A gra ceful, native perennial vine with a twining habit, Apios Americana produces fragrant maroon-chocolate flowers. Its sweet, starchy tubers, which are typically harvested in winter, can be eaten raw, boiled, fried, roasted, or prepared similarly to potatoes. Our plants come from a strain of LSU superior cultivars, known for their large tubers. Hardy in Zones 6-8. Note: 1 pound orders of groundnut are shipped as soon as placed and are only available for a short period before the tubers begin to grow.
