Gypsum (calcium sulfate) is used in brewing and winemaking to adjust the mineral content of water or must. In brewing, gypsum increases calcium and sulfate levels, which can improv e mash performance and enhance hop character in beer. In winemaking, gypsum may be used in small amounts to adjust mineral balance during fermentation.
