Hakutsuru Sayuri Nigori 720ML is a junmai nigori sake from Japan's Nada district, bottled at 12.5% ABV in a 720ml format. A Gold Medal winner at the L.A. International Wine Competition, this coarsely filtered sake delivers a creamy, naturally sweet profile anchored by lush fruit and soft rice character. Quick Facts: ABV: 12.5% | Origin: Nada District, Hyōgo Prefecture, Japan | Junmai Nigori | Brewery: Hakutsuru Sake Brewing Co. Production & Heritage Hakutsuru Sake Brewing Co., headquartered in the renowned Nada sake-producing district of Kobe, Hyōgo Prefecture, is one of Japan's oldest and most recognized sake producers. Sayuri Nigori is brewed with domestic Japanese rice polished to 70%, natural spring water sourced from Mount Rokko, and Hakutsuru's proprietary yeast strain. The sake is coarsely filtered — leaving fine rice sediment suspended in the liquid for its signature cloudy appearance — and twice-pasteurized for shelf stability, a step that distinguishes it from many single-pasteurized or unpasteurized nigori on the market. Tasting Notes Aroma: Delicate and floral, opening with cherry blossom and white grape before yielding to soft banana and ripe melon. The nose is feather-light, more suggestive than assertive. Taste: The entry is immediately creamy, with sweet rice and a velvety mouthfeel that coats the palate. Mid-palate, lush fruit notes emerge — ripe cantaloupe and strawberry weave through the rice sweetness. The SMV of -11 places this firmly on the sweet end of the spectrum, but moderate acidity at 1.6 keeps the sweetness from becoming cloying. Finish: Clean and gently sweet, with lingering fruit and a soft rice-cream fade. The finish is relatively brief but balanced, leaving a pleasant freshness. How to Drink Sayuri Nigori Serve well chilled, between 40–45°F, and gently turn the bottle upside down before opening to redistribute the settled rice sediment. Sayuri Nigori is enjoyable on its own but also performs well in cocktails: a Nigori Colada, where its creamy body substitutes beautifully for coconut cream alongside rum and pineapple; a Sake Mule, pairing its sweetness against ginger beer's spice and fresh lime; or a Calpico Sour-style highball, mixed with a splash of lemon juice and soda water for a refreshing, low-ABV long drink. Sayuri Nigori is a sweet, creamy sake with flavors of ripe melon, strawberry, and soft rice, balanced by moderate acidity that keeps the palate clean. Its cloudy, unfiltered body gives it a smooth, velvety texture unlike clear sake. How does Sayuri Nigori compare to Tozai Snow Maiden? Both are popular entry-level nigori sakes, but Sayuri registers sweeter with an SMV of -11 and leans more heavily into fruit and floral notes, while Tozai Snow Maiden tends toward a slightly drier, more restrained rice-driven profile. Sayuri is also twice-pasteurized, giving it greater shelf stability after opening. Is Sayuri Nigori good for beginners? Sayuri Nigori is one of the most approachable nigori sakes available, thanks to its pronounced sweetness, low 12.5% ABV, and soft fruit-forward character. It serves as an excellent gateway into the broader world of sake. Where is Sayuri Nigori made? Sayuri Nigori is brewed by Hakutsuru Sake Brewing Co. in the Nada district of Kobe, Hyōgo Prefecture, Japan — a region long regarded as one of the country's premier sake-producing areas. The brewery uses natural spring water from nearby Mount Rokko, prized for its mineral composition. What foods pair well with Sayuri Nigori? Its sweetness and creamy texture pair well with spicy Thai green curry, where it tempers the heat; fresh sushi and sashimi, where it complements clean fish flavors; mochi or daifuku for a Japanese dessert pairing; mild soft cheeses like brie or fresh chèvre; and fruit-based desserts such as mango sticky rice or strawberry shortcake. What sizes does Sayuri Nigori come in? Sayuri Nigori is commonly available in its standard 720ml bottle, which is the traditional Japanese sake bottle size, as well as a 300ml format suited for individual servings. Is Sayuri Nigori worth the price? Sayuri Nigori positions as an accessible, entry-level junmai nigori from one of Japan's most established breweries. Its Gold Medal at the L.A. International Wine Competition and consistent critical praise at 87 points suggest strong value within its category. Why Sayuri Nigori? Sayuri — meaning "little lily" in Japanese — is brewed in one of the most historically significant sake regions in the world, using Mount Rokko spring water and Hakutsuru's proprietary yeast, both of which contribute directly to its distinctly soft, floral character. The twice-pasteurized process provides a practical advantage: greater stability without sacrificing the lush creaminess that defines quality nigori. Its Gold Medal at the L.A. International Wine Competition validates what the palate confirms — this is a benchmark entry-level nigori that delivers authentic Japanese craftsmanship at a price point accessible to everyday drinkers. For anyone building a sake collection or simply exploring beyond wine and beer, Sayuri Nigori earns its place as a reliable starting point.
