Launched around 2009, the recipe leans on a heavy-hitting hop bill of Simcoe, Amarillo, Centennial, CTZ, and Chinook — a combination engineered for raw aromatic intensity and firm bitterness. Half Acre's brewing philosophy centers on purposefully rough, American micro beers that push for natural process and carefully selected materials, and Daisy Cutter remains the flagship expression of that ethos.Tasting NotesAroma: Dank resinous hops hit first, followed by waves of citrus peel, pine sap, and ripe papaya. There is a subtle biscuity malt undertone that keeps the nose grounded.Taste: The entry is assertively hoppy, with a sharp citrus and pine bite that commands attention. At mid-palate, tropical notes of mango and papaya emerge, balanced by a bready, biscuit-like malt backbone. The bitterness is pronounced but never abrasive, building steadily through the sip.Finish: Obscenely dry, with lingering pine resin and grapefruit pith that lasts well beyond the final swallow. The dryness amplifies the hop character and leaves you reaching for the next sip.How to Drink Daisy CutterDaisy Cutter is best served cold — around 40–45°F — straight from the can or poured into a shaker pint or tulip glass to open up the hop aromatics. Its dank, bitter profile also makes it a strong candidate for beer cocktails and culinary uses: a Michelada benefits from Daisy Cutter's citrus bite cutting through the tomato and hot sauce; a Beer-a-Rita (beer margarita) gets extra depth from the tropical hop notes; and a Shandy made with fresh lemonade tempers the dryness into a refreshing warm-weather drink.Best For Hop-forward pale ale fans exploring Chicago's craft beer scene Backyard cookouts and grilling sessions where bold beer holds up to smoky food Gifting a craft beer enthusiast who appreciates West Coast-style bitterness Stocking a home fridge with a reliable, everyday-drinking pale ale Frequently Asked QuestionsWhat does Daisy Cutter taste like?
