Upon ordering, we deliver each animal to the butcher where it is custom processed per your cut sheet, and packaged by a USDA certified facility. No orders are commingled. All beef orders are aged 14 days unless otherwise specified. Half beef orders are $13.00 per pound. The remainder due is calculated by the total amount of meat actually received (finished weight), not by hanging weight, plus any requested additional customization. What you get - Variables which affect how much meat to expect include initial weight of the animal (no two animals are the same) and additional customization (sausage, smokes, etc). Below is a generalized breakdown of what to expect using an average weight of 800 pounds. 800 lbs live animal weight 165 lbs finished weight of a half order. This is meat... no fat, no bones! Bulk fat and bones are yours free if you choose! At $13.00 per pound finished weight, final cost of a half order would be about $2,150 (includes prepaid deposit).
