The distillery produces its own white rum in-house, which serves as the base spirit for this expression. What separates it from the majority of commercial coconut rums is the infusion method: flaked coconut is toasted on-site before being steeped into the spirit, then finished with natural sea salt and lightly sweetened with pure cane sugar. The result is a richer, more textured coconut character than what artificial or standard flavorings typically achieve.Tasting NotesAroma: Bold, sweet toasted coconut dominates the nose immediately, followed by soft vanilla and light caramel. Subtle herbal and peppermint spice notes emerge underneath, adding unexpected complexity to an otherwise tropical profile.Taste: The entry is thick and syrupy, with buttercream and toasted coconut coating the palate from the start. At mid-palate, butterscotch and burnt toast flavors develop alongside almond sweetness. The natural sea salt becomes apparent here, lending an addictive salted-caramel quality that Wine Enthusiast specifically highlighted in its 91-point review.Finish: Medium in length with a warm, creamy texture that lingers. Toasted coconut and residual vanilla sweetness fade slowly, leaving a comforting tropical impression without turning cloying. How to Drink Hard Truth Toasted CoconutAt 21% ABV, this rum is designed for mixing and sipping over ice rather than neat consumption in the traditional sense. Poured over crushed ice, the sea salt and toasted coconut open up nicely without dilution washing out the flavor. Piña Colada: The house-toasted coconut adds genuine depth that eliminates the need for cream of coconut, producing a more balanced version of the classic. Coconut Espresso Martini: The butterscotch and burnt toast notes pair naturally with cold-brew coffee and coffee liqueur for a tropical riff on the espresso martini. Salted Coconut Daiquiri: The built-in sea salt complements fresh lime juice, creating a savory-sweet daiquiri variation that requires minimal additional ingredients. For anyone who has written off coconut rum as one-dimensional, this Indiana-made bottling challenges that assumption with genuine craft and measurable critical recognition.
