Hellaby New Zealand Prime French Trimmed Lamb Rack Cut Overview: Sourced from Hellaby, one of New Zealand's most prestigious meat producers with over a century of pastoral heritage. Exclusively raised on pristine, untouched native green pastures, selecting only tender prime young lamb for supreme quality. Meticulously French-trimmed to remove excess cap fat and connective tissue along the ribs, revealing pristine bone handles for elegant fine-dining presentation. Flavor & Texture Profile: Flavor Profile: Pure free-range pasture feeding ensures a remarkably delicate, sweet herbal fragrance with subtle milky undertones, completely free of any harsh, gamey mutton odors. Texture Profile: Exceptionally fine-grained muscle fibers deliver an impeccably soft, juicy mouthfeel. Searing creates a savory golden crust while keeping the interior succulent, fork-tender, and bursting with delicate juices. Culinary Applications: The undisputed gold standard for fine-dining entertaining, excelling across herb-crusted whole rack roasting, thick single-cutlet pan-searing, open-flame charcoal grilling, or teppanyaki searing. Cooking Tips: Classic Whole Rack Roast: Pat completely dry and rub with sea salt, cracked pepper, garlic, and fresh rosemary. Flash-sear all exterior surfaces in a smoking-hot skillet to seal in juices, then transfer to a preheated oven at 200°C for 12 to 15 minutes. Cutlet Flash-Sear: If sliced into individual cutlets, sear in a hot cast-iron skillet for 2 to 2.5 minutes per side. Always let the meat rest on a warm plate for 5 minutes prior to serving to equalize internal moisture. Target Doneness: Aim strictly for Medium (rose-pink core) to experience peak tenderness and juiciness without drying out the delicate young fibers. Note: Hand-portioned inside our licensed facility from imported New Zealand primals. Natural variations in bone count, weight, and fat coverage are entirely normal.
