The bastardella is an Italian container similar to a mixing bowl, made of steel, equipped with two handles, with a hemispherical shape and a flat bottom. Its name derives from the lack of a precise shape. The most common bastardella, however, is the hemispherical one and is used to whisk egg whites or cream, to cook creams or sauces in a bain-marie, or to prepare mayonnaise and other cold sauces. The best-known condiment in Italy made in the bastardella pot is mayonnaise, a creamy preparation of eggs, lemon and extra-virgin olive oil that is served cold as an accompaniment to fish dishes or antipasto, or as an ingredient for more elaborate sauces like the one for vitello tonnato.
