Marquis '00': Marquis a cross between Red Fife and Red Calcutta, developed in Canada in 1906. It accounted for 11 million acres of wheat grown in the U.S. by 1919. This Colonial Era wheat hasn’t been tasted in over 50 years and we’ve worked hard to revive it for you! This soft wheat is a go-to for delicate pastries, muffins, cakes, and enriched breads. Sonora '00': Quite possibly the most beloved flour of our BSM staff. Sonora is one of the oldest surviving wheat varieties anywhere in North America.
