We brew whole dried hibiscus into a deep ruby tea, strain it, and build the whole sauce on that tart, floral base. From there it layers up: sweet carrot and onion for body, fresh ginger, garlic, and thyme, warm allspice and clove, and habanero for a clean, fruity heat. Bright lime and apple cider vinegar keep it lively, with just enough cane sugar to round the edges. The result is tangy, floral, and genuinely hot - but balanced, so the fire never buries the flavor.
