All of High Lawn’s cheeses are unique expressions of their pure Jersey milk. After farming Jersey cows for over 100 years, High Lawn understands the Jersey breed like few other farms do. Jersey milk has higher levels of vitamins, minerals, and protein than other breeds, giving cheeses made with it a complex, sweet flavor.
