French artist Bryan Raquin's contribution to The Art of Cutlery, a gyuto named "Hojou," on show during summer 2024 in Tribeca, NYC, is a classic, refined Raquin culinary tool embel lished by award-winning Japanese engraver, Mali Irié-Cros. The blade is hand-forged from house-made san mai steel with a core of small-batch 145sc carbon steel, water quenched, and sharpened on a progression of whetstones. The forge-finished flats on the blade's left side are engraved by Mali with striking and detailed dragon imagery. The handle is shaped from locally sourced burnt wine barrel oak.
