Your new everyday coffee. A Fair Trade and Organic certified light roast from Honduras, roasted by Bendix in Michiana. Sweet, clean, and consistent enough to drink every morning wi thout getting bored of it. What it tastes like Bright and airy up top with a medium to heavy presence through the middle, so it's delicate without being thin. The acidity is gentle rather than sharp. Honduran coffee sits in a comfortable middle ground, more sweetness and body than the citrusy East Africans, more brightness than a typical Brazilian, which is exactly what makes it a good daily bag. Light roast, brewed right Light roasts keep more of the origin's character but they're less forgiving, because the beans are denser and need more heat and a slightly finer grind to give up their sugars. Brew it like a dark roast and it'll taste sour and thin, and that's the brew, not the coffee. For pour-over, go medium-fine, water at 205°F, 1:16 ratio, about 20g coffee to 320g water. Sour means grind finer or brew hotter. Bitter and drying means back off. Pour-over, drip, AeroPress, and French press all work. The roaster reckons it shines most as a pour-over, and I'd agree. What Fair Trade and Organic actually mean here Fair Trade sets a price floor paid to the growing cooperative, so the farmers aren't at the mercy of the commodity market when it crashes. Organic certification covers how it was grown, no synthetic pesticides or fertilizers. They're separate certifications covering different things, and this coffee carries both.
