Sourced from a single biodynamically farmed vineyard in Wiltshire, the fruit is pressed using a traditional Coquard basket press. The winemaking utilizes spontaneous native fermentation, with ten percent vinified in clay amphorae and the remainder in seasoned Burgundy barrels. It undergoes secondary bottle fermentation and is bottled unfiltered with zero added sulfur. It displays a pale straw hue with a fine, persistent bead, releasing a distinctive aroma of crisp apple skin and orchard blossoms. A light-bodied, linear frame balances fruity expressions with an underlying chalky mineral core. The mouthfeel is dry and showcasing a low level of alcohol with an admirable fruit concentration. A sharp wave of cool-climate acidity runs through the mousse, providing excellent structural lift.
