It’s an omni roast — versatile and carefully developed to perform beautifully as both filter and espresso. The roast profile preserves the coffee’s natural sweetness and fruit character, resulting in a round, clean, and satisfying cup. This coffee comes from the Cooperativa de Cafés Especiales de Nariño, located in the mountain town of Buesaco, high in Colombia’s Nariño region. The cooperative works with more than 300 smallholder farmers who grow coffee on the fertile slopes surrounding the Galeras volcano. Through training and premium payments, the cooperative supports sustainable agriculture and discourages the use of harmful chemicals, ensuring both quality and environmental care. The decaffeination is done using the Ethyl Acetate (EA) method, a natural process that uses ethyl alcohol derived from sugarcane. The caffeine is gently removed while preserving the coffee’s flavor integrity, leaving behind a clean and aromatic cup with no chemical aftertaste. The result is a decaf coffee that feels just as full and flavorful as a traditional roast — rich, smooth, and perfectly balanced.
