Hypocras Chocolate Creams Medieval Hypocras is a warmed drink, usually made with wine, sugar and spices. Spiced wines date back to the Roman era but Hypocras was particularly popular during Medieval times. We have adapted a medieval recipe, using a red wine infused with nutmeg, clove, fennel, cinnamon and ginger, incorporated with a dark chocolate ganache.
