I.W. Harper Cabernet Cask Reserve Bourbon 750ML
I.W. Harper Cabernet Cask Reserve Bourbon 750ML is a 90-proof Kentucky straight bourbon finished in California Cabernet Sauvignon wine casks, bottled at 750ml. This dual-maturation approach—four years in new charred American oak followed by a secondary rest in Cabernet casks—bridges the gap between traditional bourbon character and layered dark-fruit complexity in a way few finished bourbons attempt. Quick Facts: ABV: 45% (90 Proof) | Origin: Kentucky, USA | Style: Wine Cask-Finished Bourbon | Distillery: New Bernheim (Bottled at Stitzel-Weller) Production & Heritage I.W. Harper is a historic American bourbon brand now owned by Diageo. The Cabernet Cask Reserve expression is distilled at the New Bernheim Distillery (a Heaven Hill facility) in Louisville, Kentucky, then bottled at the storied Stitzel-Weller Distillery, also in Louisville. The mashbill runs 73% corn, 18% rye, and 9% malted barley—a rye-forward grain recipe that provides structure before the wine-cask influence takes hold. After its initial four-year maturation in new charred American oak barrels, the bourbon is transferred into casks that previously held California Cabernet Sauvignon, allowing the residual wine tannins and fruit sugars to integrate with the base spirit. The result is a bourbon that retains its grain-driven backbone while picking up a distinctly vinous dimension. Tasting Notes Aroma: Caramel and brown sugar lead the nose, followed closely by dark cherry and sweet raisin. A second pass reveals black raspberry, vanilla, and a subtle crème brûlée sweetness layered beneath a faint cornhusk note. Taste: The entry is smooth and gently sweet, with vanilla and light caramel arriving first. At mid-palate, the Cabernet influence asserts itself—dark fruit and a thread of berry tartness emerge alongside toasted oak. The rye component surfaces toward the peak, adding a measured spice that keeps the sweetness in check. Finish: Medium in length with a smoky, oak-driven fade and lingering hints of dark fruit. The close is clean and balanced, with no harsh tannic grip from the wine cask. How to Drink Harper Cabernet Cask Reserve Neat or with a single large ice cube is the most revealing serve, allowing the wine-cask nuances to unfold gradually as the bourbon opens up. A few drops of water will amplify the dark cherry and berry notes without diluting the oak structure. Manhattan: The dark-fruit undertones mirror the sweet vermouth, creating a seamless, berry-accented variation. Boulevardier: Cabernet-cask tannins stand up to the bitterness of Campari while the fruit notes amplify the cocktail's complexity. Old Fashioned: The inherent sweetness reduces the need for added sugar, letting the wine-cask character shine through with just a dash of bitters. It delivers a smooth, moderately sweet bourbon profile anchored by vanilla and caramel, with distinct layers of dark cherry, black raspberry, and toasted oak contributed by the Cabernet Sauvignon cask finish. How does Harper Cabernet Cask Reserve compare to Angel's Envy Port Finish? Both are wine-cask-finished Kentucky bourbons, but Harper's Cabernet finish leans toward darker, drier fruit notes and tannic structure, while Angel's Envy Port Finish tends toward sweeter, jammier berry and stone-fruit character. Multiple reviewers have noted that Harper Cabernet Cask Reserve reads as more balanced and less overtly sweet than its port-finished counterpart. Is Harper Cabernet Cask Reserve good for sipping neat? Yes—the 90-proof strength is approachable enough for neat sipping, and the wine-cask finish adds complexity that rewards slow, attentive drinking without requiring dilution. Where is Harper Cabernet Cask Reserve made? It is distilled at the New Bernheim Distillery in Louisville, Kentucky, and bottled at the historic Stitzel-Weller Distillery, also in Louisville. Both facilities are part of the Diageo spirits portfolio. What foods pair well with Harper Cabernet Cask Reserve? Dark chocolate truffles complement the cherry and berry notes; grilled lamb chops echo the wine-cask tannins; aged cheddar contrasts the bourbon's sweetness with savory sharpness; dried fig and walnut charcuterie boards mirror the raisin and oak tones; and berry-based desserts like blackberry cobbler reinforce the Cabernet-cask fruit influence. What sizes does Harper Cabernet Cask Reserve come in? The standard widely available size is the 750ml bottle. Is Harper Cabernet Cask Reserve worth the price? It positions as a mid-range finished bourbon, sitting in a competitive tier alongside other wine-cask expressions. The dual-maturation process and the distinctive Cabernet Sauvignon influence provide genuine added complexity that justifies the modest step up from entry-level bourbons. Why Harper Cabernet Cask Reserve? The Cabernet Sauvignon cask finish remains relatively uncommon in bourbon, where port and sherry casks dominate the wine-finished category. That distinction alone gives this expression a different flavor lane—drier and more tannic than port-finished alternatives, with a dark-fruit profile that integrates cleanly with the 73% corn, 18% rye mashbill. The combination of New Bernheim distillation and Stitzel-Weller bottling ties the liquid to two of Kentucky's most recognized bourbon facilities. For drinkers who find port-finished bourbons overly sweet, this Cabernet-cask bottling provides a structured, balanced alternative that still delivers the richness cask finishing is meant to achieve.
