The result is a lusciously rich, intensely sweet cyder that drinks like a fine dessert wine and pairs beautifully with cheese and puddings. THE PROCESSRipe dessert apples are pressed, then the juice frozen. This separates the water from the intense, syrup-like nectar, which is then cold-fermented in a cellar.
