Ichiban is a popular Japanese-type eggplant that produces long, slender, dark purple fruits typically 8–10 inches long with smooth, glossy skin and tender, creamy white flesh. It h as a mild, sweet flavor with very few seeds. It is excellent grilled, stir-fried, roasted, or used in eggplant parmesan and Asian dishes.
