Icicle radish is a classic heirloom variety that produces long, slender, white roots typically 4–6 inches long with smooth skin and crisp, mild, sweet peppery flesh when harvested young. The roots have a refreshing crunch and tender texture. They are excellent eaten raw in salads and crudités, sliced thin for sandwiches, pickled, or lightly roasted.
