Idiazabal is a pressed cheese made from unpasteurized Latxa and Carranzana sheep milk in the Basque region of Spain. While un-smoked, it has a naturally smokey undertone, and a fla vour that runs from nutty and buttery when young to dry, salty and sharp when aged.
