India Idukki 72% We've been working with this cocoa for a while, but we hadn't released a plain black yet, because we couldn't achieve the result that this great cocoa deserved. Now, after some attempts, with pretty positive feedback in test sales, we finally officially launched, Dark INDIA IDUKKI 72%, our rendition. Idukki is a green hilly region located in the state of Kerala in southern India. Cocoa is grown on small, local estates, surrounded by tropical fruits such as mango, papaya and coconut, as well as aromatic spice trees such as pepper, nutmeg and cardamom. Fresh cacao fruit is transported weekly to the fermentation center where it undergoes the careful fermentation and drying process, based on proper protocols. Cocoa produced through close trust collaborations with partner farmers, has a clean and vibrant fruity taste, with a subtle aroma of spices, as if it were a reflection of its creation. With its impact and sophisticated profile, this cocoa integrates a selection of grains that, we can confirm, best express the potential in chocolate manufactured using bean to bar method.
