Collaboration goes both ways. The first time we brewed together, HopSaint Brewing Company put their spin on our West Coast IPA. This time, we flipped the script with our take on their award-winning Pure Intention Pale Ale. Guided by HopSaint’s Head Brewer Danny Jimenez, we brewed our first beer using the modern “dip-hopping” technique, featuring Mosaic Incognito—a flowable hop extract that layers beautifully with a double dry hop of Mosaic, Mosaic Cryo, and El Dorado. Chinook and Simcoe in the kettle and whirlpool round it out with a clean, classic bitterness, creating a light-bodied Pale Ale with bright notes of grapefruit zest, lemongrass, and pine.
