This spontaneous wild beer is inspired by traditional Lambic beers - funky, bright, vinous brews from 13th century Belgium. During overnight temps in the fall, traditional turbid w ort is rested for several days in an open-air coolship. This allows wild yeasts and microorganisms to add their flavour-causing goodness, before a three year aging process begins. The 2025 batch is light, tart, funky, and extra bubbly! Show more
