Ominous Positivity - Hazy IPA by Ocho An IPA Theory series release **Nov update: 20% off until it's all gone!** IPA Theory is a new series of delicious hop-centric beers all about brewing creatively. We brew a new India Pale Ale as a limited release for the IPA Theory range every 6-8 weeks. Ominous Positivity is the 11th release in our IPA Theory series, and is an experimental hazy IPA in which we used local grape skins (post-ferment) in the mash as a way of introducing thiols that the yeast can later metabolise to create unique fruity flavours. We used a simple grist, and fermented with a yeast strain with good biotransformation activity to boost the fruitiness contributed by the grape skins as well as the hefty dry-hop additions of Idaho 7, Citra and Nelson Sauvin. The result: white peach, pineapple and rockmelon compete on the aroma, with a sweet and spicy palate and a clean finish. An incredibly bright and fruit-driven hazy IPA. Packaged 29th September 2025.
