IRISH SODA BREAD MIX - I first landed in Dublin on a cold and rainy day in May that felt like March. My backpack was far too heavy and I found myself injured as soon as I hopped off the train. The B&B which advertised Cold running water and Heat from 10 pm-5 am was within my budget but not within the city center. When I finally arrived at my destination darkness had descended I was utterly dispirited. Despite the description, Mrs O'Leary's home was warm and cozy. A cup of hot tea and a slice of warm homemade soda bread made me finally feel like the road had risen to meet me and I was finally in the land of a thousand welcomes. We created this recipe in Mrs. O'Leary's spirit. Céad míle fáilte! Sugar Cane Box (10oz.) INGREDIENTS: Wheat Flour Enriched (niacin, Reduced Iron, Thiamine, Mononitrate, Riboflavin, Folic Acid) Malted Barley Flour, Raisins, Baking Soda, Cream of Tartar, Corn Starch, and Kosher Salt. Just Add: Milk, Lemon Juice, Oil, Eggs, and Honey. Instructions 1 tbsp honey, 3/4 cup milk,1 tbsp lemon juice, 2 tbsp salted butter Preheat oven to 375F. Line a baking sheet with parchment. Pour the mix into a bowl and stir with a fork to blend. Add the lemon juice to the milk. When it begins to separate stir into the flour mixture, along with the honey, until the dough comes together. Blend in the butter using a pastry cutter or forks, do not over mix. Clumps in the batter will add pockets of flavor. Turn the dough out onto a lightly floured work surface and knead gently for a minute. The dough will be soft and malleable, but, tantalizing as it is, it should not be overworked. Pat the dough into a disk about 6 inches across, slash an X across the top, cutting it about 1/2-inch deep, and place the dough in the greased pan or on the baking sheet.
