Used primarily by commercial brewers, isinglass is effective against all three major barriers to clarity: yeast, proteins and polyphenols. Isinglass in its pure form must be mixed with an organic acid before use, but many types of isinglass sold for home brewer use are so called "instant" variants that come premixed with the acid needed for preparation. Be sure to follow the directions that came with your isinglass. A bi-product of the swim bladder from a fish, isinglass is used to clear white wines or fermented beer. Wine Instructions:Before starting siphon the wine off of any sediment into a clean fermenter. Stir in 1 ml of liquid Isinglass for every 1 litre of wine to be cleared. Allow 3 to 4 days for the wine to clear then siphon off of the sediment before bottling. Beer Instructions:Typical application rates are 6 ml mixed with 250 ml of hot water per 20 litres of beer, and allow 4-5 days before racking or bottling.
