Italian Parsley is a versatile flat-parsley with an intense flavour. It imparts flavour and texture to salads and cooked dishes and is an attractive garnish. • Combine a cup of Italian Parsley, 3 peeled cloves of garlic, tablespoon of butter, salt and pepper to taste and blend in a processor until smooth. Mix in 2 tablespoons of olive oil and store in the fridge. Use on fish, pasta, steamed vegetables or corn on the cob. • Finely chop Italian parsley and add boiled potatoes with a little butter or olive oil. • Add whole sprigs of Italian parsley to tomato sauces near the end of the cooking time and remove before serving. • Add to chicken stuffings. • Finely chop Italian parsley, oregano and basil and add to bread crumbs for coating veal, pork or chicken. • Mix softened butter with chopped Italian parsley and top steaks, fish or vegetables, a restaurant classic.
